Job Purpose
To provide a unique culinary and hospitality service in a unique environment. To produce food of the highest standards to the satisfaction of the client and internal STH structures. To provide a unique hospitality service to the Vice Chancellor’s Residence and inhabitants.
Key Performance Areas
Culinary Services
- Provide food and beverage services to the VC household and guests in an efficient, professional and friendly manner
- Do menu planning, menu costing, the buying and ordering of stock
- Ensure the daily food production against the VC’s requirements, and in line with STH standards
- Order the appropriate quantity and quality of food required and ensure proper stock control in order to achieve the required targets
- Ensure that hygiene requirements in terms of HACCP are adhered to
- Manage the correct use of equipment and ensure maintenance thereof
- Ensure that storerooms are clean and hygienic
- Manage pest control of the service areas
- Ensure financial controls are in place and maintained
Front Office: Hospitality Services
- Provide professional hospitality services with regard to day visitors and stay over visitors
- Ensure that the needs of clients are adequately met
- Providing reception services, receiving guests in a friendly manner
- Answer telephone in a professional manner, take and relate messages
- Welcome guests (day visitors & stay over visitors
- Check guests in, do room allocation and check guests out
House Keeping
- Provide professional hospitality services with regard to day visitors and stay over visitors
- Ensure that the needs of clients are adequately met
- Providing reception services, receiving guests in a friendly manner
- Answer telephone in a professional manner, take and relate messages
- Welcome guests (day visitors & stay over visitors)
- Check guests in, do room allocation and check guests out
Health & Hygiene Services
- Take full responsibility for the general cleanliness, health and safety aspects of the entertainment and guest areas
- Implement a pest control program for the relevant service areas
Training & Development
- Provide guidance and/or mentorship to STH students allocated to the VC Residence, as well as the contract cleaning service
- Conduct assessments of students' portfolios, behaviour and performance in support of S to IL process where applicable
Security
- Communicate and cooperate with UJ security services and officers on a regular basis
- Inform and coordinate with security officers regarding special functions
- Adhere to security principles as determined by the UJ security policy and procedures
Personal Training & Development
- The incumbent will participate in training programs in discussion with line management and where applicable the relevant official in the Commercial Unit of the STH
Requirements
Education
- Grade 12 / Matric
- Professional Cookery certificate
Experience
- A minimum of 2 years Professional cookery experience in the hotel / guest house / hospitality industry
