The Vineyard Hotel is currently seeking master chocolatier to join our team, who will oversee all levels of production of truffle and bon-bon making.
Key Responsibilities Will Include
- Work in conjunction with the pastry department and the Executive Sous Chef
- Do recipe costing on pastries and chocolates.
- Manage the chocolate room and stock
- Develop and implement proactive solutions for the pastry department
- Train staff to make chocolates
- Develop innovative chocolate products and develop flavour profiles
- Monitor manufacturing and supply chains
- Perform cleaning and disinfecting functions
- Act as an overseer in the pastry department by monitoring standards
- Ensure that all chocolate work is of an international standard
- Performing stringent quality tests on raw materials
- Matric
- Minimum 5 years experience working with chocolate.
- Track record leading and managing a team.
