We are looking for a head butcher/blockman to fill up a position in an upmarket restaurant in Umhlanga.
Job responsibilities:
- The head butcher will take ownership and responsibility of the meat and butchery programme in our Company.
- The head butcher will carry out key operational requirements as described below so as to ensure the effective operation of a profitable, hygienic and conscious butchery department within the store.
Job requirements:
- Previous butchery administration experience and block testing is essential, as the role will require the head butcher to develop, cost and maintain the set butchery targets and budgets.
- The head butcher must be passionate about meat and the processing of products and must have a drive to achieve customer satisfaction and develop lasting relationships with butchery customers.
- The head butcher must be strong in maintaining key operational, back of house requirements, allowing time to be devoted to service and customer interaction.
- The head butcher can advise customers on cuts and post purchase advice on cooking methods and preparation techniques.
- Knowledge of free range meat and dry ageing programmes are preferred, while waste management and knowledge of the nose to tail concept is highly favoured.
- The most important role is that you must have a passion for all meat related trends and ethical practices, maintaining an open policy with the butchery customers in order to educate and deliver any requested information that a customer may request, from origin of the product to the final format of the products being sold.
- The head butcher will take interest in developing relationships with the store’s meat suppliers and farmers to ensure consistent and sustainable supply.
