Permanent Junior Sous chef/Sous chef position available at Kapama Private Game Reserve – Buffalo Camp. 20 Guest Lodge – 5 Star.
Job requirements:
- RSA men/women of any race may apply
- The candidate must be able to get along with different nationalities, mature women who are set in their ways, keep staff motivated and maintain a pleasant and upbeat working environment.
- Must have at least 3 years’ experience working in kitchens and understand kitchen basics such as hygiene, time keeping, planning, procedures, basic cooking skills, storage requirements, health and safety, communicate fluently in English with guests and staff.
- Must be computer literate and able to place orders on online systems with suppliers, send emails and use Windows office.
- Experience required with both buffet and plated dishes.
- Training will be provided but all round kitchen department interest is important.
- This is an extremely busy kitchen with long shifts, hard work and high tension. This must be an environment in which she thrives.
- Must be able to learn a 7-day cycle menu with 5 courses and run own shift at breakfast and lunch or dinner and cook for 20 guests by themselves and do their own preparation with a junior to help.
- A lot of training and guidance will be given in this regard.
- Looking for an individual who stays sharp under pressure.
- Will also assisting Head Chef in day to day management of kitchen with duties such as ordering, staff discipline, training, resolving emergency issues regarding stock and guests, dealing with guest issues, maintenance issues, deal with supplier issues, place orders, stock take, manage Food and Beverage Department, resolve staff conflict etc.
- Must clean with the kitchen team.
- Required to live in – 3 week on/1 week off basis.
- Must be registered with SARS and have a tax number.
- Must have a driver’s license.
- No criminal record (will be finger print tested).
- Must be South African Citizen.
- Professional training required.
- The candidate’s personality and attitude is more important.
- A chef with a chip on his/her shoulder or feel that they are doing us a favour to come for an interview need not bother. They will not fit into this team.
- Apart from salary, position includes single accommodation with private bathroom (shower and toilet), uniforms, 3 good meals a day, pension fund, tips from staff pool.
