Education: • Grade 12 or equivalent
• Tertiary: Professional Cookery / Culinary Diploma
Work experience:
• Previous experience as a Chef in a sophisticated environment
• Familiar with all duties and procedures in the Kitchen
• Display creative and unique culinary skills
• MS Office (Word, Excel and Email) is essential
Other: • Reliable, responsible and dependable to fulfil obligations

Tasks (include but
not limited to): • Keep control of the ordering from delivery to issuing to different departments
• Fully responsible for the agreed food cost
• Fully responsible for the hygiene of the kitchen
• Always be available to help with stock taking measures and assist with the capturing of it
• Keeping cleaning rosters, time sheets, order sheets and maintenance rosters up to date and implemented
• Have detailed documents on opening and closing procedures of the kitchens
• To contribute and be involved in meetings and daily handovers
• Carry out instructions given by management and the head office
• Maintain food quality and presentation standards set by the COO and Chairman
• To ensure food is prepared in a timely manor
• Communicate a detailed handover to the COO and Chairman on a daily basis
• Report necessary problems and shortages to the COO and Chairman
• Liaise with group food custodian on all new ideas and suggestions
• Ensure that all HACCP standards are maintained
• Ensure that the kitchen equipment is clean and in working order at all times
• Maintain the tidiness of all store rooms, fridges and freezers
• Make sure that at all times the kitchen is in a hygienic, clean and orderly fashion
• Ensure that the facilities file is up to date and being correctly implemented
• To ensure a minimum wastage of raw and cooked materials
• Keep up to date with current promotions and new products
• Keep staff personal information up to date in their files
• Make sure all the Company’s rules and regulations are implemented at all times throughout the kitchen
• To ensure that all staffing issues are dealt with in the correct manner in coherence with the COO and Chairman
• Maintain correct staffing levels
• Correct disciplinary procedures and actions to be enforced at all times
• Assist the COO and Chairman with administrative work relating to disciplinary problems as needed
• To maintain the status quo in the kitchen environment thus assisting to eliminate uncalled for disciplinary problems
• Supervise the quality of food, work and produce in the kitchen
